The chef behind Boulder’s Sforno Trattoria Romana opened his latest Italian concept earlier this month in southwest Longmont. Caprese Trattoria replaced the fast-casual Mediterranean favorite Basil Flats at 1067 S. Hover Road.

Fans of Monnanni’s Sforno in Boulder will likely find much to enjoy at Caprese Trattoria. The traditional Italian menu features Monnanni’s signature house-made mozzarellas, as well as a variety of traditional Italian antipasti and pasta. Many of which are available for discounted prices during the daily happy hour from 3 to 6 p.m. 

Caprese Trattoria also offers a full bar and two patios, providing diners a view of the new Village at the Peaks mall across Hover Road’s four lanes of traffic.

Caprese Trattoria offers Lunch, Dinner and Happy Hour 7 days a week with Authentic Italian Cuisine items such as Piccoli Piatti Di Carne, Di Pesce and Antipasti, Bruschette (Things on bread), La Caprese (Homemade mozzarella), Zuppe, Insalate and Insalatone (Full Size Lunch Salads), Pizza, Ravioli, Pasta, Secondi, Dal Forno (From the Oven), Panini, Focaccia and Contorni (Sides).

Specialty Dinner menu items include Salumi (Cured meats), Piatti Per La Tavola (Large plates for the table for two or more) and other items including Cioppino, Salmone Salsa Verde, Cannelloni, Grigliata Di Carne and Grigliata Di Pesce to name just a few.

Our Happy Hour Menu features Salumi, Bruschette, Pesce, Verdura, Pizza and other House Specialties including Polpette - House made meatballs with tomato basil sauce, topped with sheep's milk ricotta and basil and Porchetta - Pan roasted pork belly, sherry reduction sauce and wild mushroom ragu which are complimented with House Wine, Draft and Bottle Beer and Specialty Cocktail specials.

Caprese Trattoria also offers and extensive wine list of white and red wines by the glass, Crisp & Clean White Wines, Rich & Round White Wines, Lighter Style Red Wines, Middle Weight Red Wines and Full Bodied Red Wines by the bottle.

EXECUTIVE CHEF

Marco Monnanni, Chef of Caprese Trattoria, taps into ages of ancestral Italian cooking.  Each time Chef Marco is in the kitchen, he brings a rich love of the cuisine that he has so skillfully learned through the years. Born in Rome, Central Italy, Monnanni was a restaurant apprentice at age 14 in Rome, making fresh pasta and other specialities by hand; he later attended hotel school in Verona, Italy.  

Monnanni's creative talent drew him to restaurants in northern and southern Italy. Chef Monnanni honed his skills in international kitchens in Switzerland, Germany and later in New York City and Las Vegas. He also was chef and partner at Antica Roma, Pane e Vino and Acqua Pazza in Boulder, Colorado. A man with a sweet smile, Monnanni speaks Italian, English and Spanish and has a passion for skiing.

A three-time Emmy Award winning television producer, Art has decided to expand his horizons during his retirement as a partner in Caprese Trattoria. Being of Italian heritage and a lover of great Italian cuisine, his new interest in Italian cooking has led to a perfect partnership. As the largest independent television producer, The Arthur Company made its mark in Los Angeles during the 80’s and 90’s with over 900 hours of TV programming to its credit. Such shows as AirWolf, FBI, the untold stories, The New Munsters and many sitcoms were produced by him. Arthur retired and moved to Boulder where he pursues his many interests with his wife and family, his 1935 WACO biplane, his Harley motorcycles, film projects for charitable groups, and extensive world-wide travel. He’s looking forward to a long and tasty relationship at CAPRESE TRATTORIA.
